Shredded Hawaiian Chicken

This relies on this slow cooker recipe as the base. You can make this recipe much easier and faster by using a rotisserie chicken and a Dutch oven--it's done in ~30 minutes!

  1. Dice 2 chicken breasts' of meat off the rotisserie.
  2. Dice a big bell pepper and a big jalapeno and put them on the stove at medium-high. Roast them until they have some nice crisped spots on the outside.
  3. Sautee garlic for 30 sec
  4. Throw everything else in. Make sure to drain your pineapples. We used spicy BBQ sauce.
  5. Cook on medium for a while until everything has absorbed some sauce and become a beautiful shredded sludge
  6. Serve with white rice or on buns and add some cholula for a fuller roasted pepper flavor

Note: Even with spicy bbq sauce, Cholula, and a jalapeno, this dish had really mild heat. The Cholula made a huge difference at the end as a final touch by adding in some vegetal brightness and spice!
