Shredded Hawaiian Chicken
This relies on this slow cooker recipe as the base. You can make this recipe much easier and faster by using a rotisserie chicken and a Dutch oven--it's done in ~30 minutes!
- Dice 2 chicken breasts' of meat off the rotisserie.
- Dice a big bell pepper and a big jalapeno and put them on the stove at medium-high. Roast them until they have some nice crisped spots on the outside.
- Sautee garlic for 30 sec
- Throw everything else in. Make sure to drain your pineapples. We used spicy BBQ sauce.
- Cook on medium for a while until everything has absorbed some sauce and become a beautiful shredded sludge
- Serve with white rice or on buns and add some cholula for a fuller roasted pepper flavor
Note: Even with spicy bbq sauce, Cholula, and a jalapeno, this dish had really mild heat. The Cholula made a huge difference at the end as a final touch by adding in some vegetal brightness and spice!
